For about 4 Pieces of Chicken thigh

Marinade:

  • Oyster Sauce (2 Tbsp)
  • Mushroom Soy Sauce (2 Tbsp)
  • Onion Powder (1 Tsp)Optional
  • Garlic Powder (1 Tsp)Optional

Marinade Chicken in above ingredients and leave for at least 30 mins (Cling wrapped and in the fridge)

Frying:

  • 2 Eggs
  • Panko Crumbs

Typically people would use flour to help bind the chicken to the panko but I find that you don’t really need it.

  • Cover marinaded chicken with Panko crumbs
  • Dip Panko covered chicken in beaten egg mix
  • Then put panko crumbs all over chicken again
  • Wait for oil on high heat and drop in oil to begin frying
  • Fry until golden brown both sides

Egg base:

  • 1 Egg

At the end pour beaten egg onto hot pan, then put chopped pieces of katsu chicken above egg.

Garnish:

  • Spring onion (optional)
  • Kewpie Tartare sauce/Mayonaise (optional)
  • ABC sauce (optional)

I used a combination of the above.
